Nutritional Benefits of This 3 Bean Salad

With 3 different types of beans, this salad is packed with fibre.

Fibre is one of the most underrated nutrients, and we aren’t getting enough of it in our diets!

Eating more fibre-rich foods like beans will help you get more fibre into your diet, which is why this bean salad is a perfect option when you want a quick and easy fibre boost.

What You’ll Need

  • 3 different types of beans – I used kidney beans, cannellini beans and borlotti beans
  • Fresh dill – Use as much as you’d like. I used a handful.
  • Lemon – This is juiced over the salad to give it a fresh, zingy summer flavour.
  • Pot of chilli marinated olives with cheese – You can get these in most supermarkets in the olives or deli section.

How to Serve This 3 Bean Salad

I could happily eat this 3 bean salad on it’s own (it’s that good). But here are some ideas of how you can serve this throughout the week:

  • As a side with a baked potato or any other dinner
  • As a salad option for a family BBQ
  • With quinoa or couscous for a healthy packed lunch
  • In a wrap with chicken, tuna or a plant-based protein
