Tuna mayo lovers – this one’s for you! As someone who loves tuna mayo and could eat it every day for lunch, I wanted to create a plant-based version to have in a sandwich or on top of a baked potato to mix things up, and to ensure that I’m still eating plenty of plants. So I created this chickpea tuna mayo recipe that I LOVE, and it also happens to be a complete hit with my family!

Can I Make This Chickpea Tuna Mayo Vegan?

Apart from the mayo, all the ingredients in this recipe are plant-based. So if you’d like to make this recipe vegan-friendly, simply substitute the mayo for a vegan alternative.

Many brands have vegan mayo alternatives in the supermarkets, including Hellmann’s and Heinz, so this recipe can easily be made vegan!

Do I Have to Use Nori?

If the idea of seaweed puts you off, you can leave it out. However, even just a little bit of seaweed can help transform the flavour of this dish to taste a little more tuna-like. So give it a go with 1/2 or even a 1/4 sheet of nori and see what you think.

Plus, texture-wise, you’ll barely notice the nori. Due to the moisture from the mayo, the nori will soften down nicely (just make sure to chop it into small pieces).

Ingredients
  

  • 1 tin of chickpeas (drained and rinsed)
  • 2 heaped tbsp mayo (use vegan mayo if making vegan)
  • 1/2 red onion, finely chopped
  • 1/2-1 sheet of nori, finely chopped using scissors (use more or less depending on how "fishy" you want the flavour)
  • 1 large / 2 small gherkins, finely chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp nutritional yeast
  • 1/2 tsp dijon mustard
  • 1 tsp malt vinegar
  • Pinch of sea salt
  • Pinch of ground black pepper

Instructions
 

  • Drain and rinse the chickpeas and add to a mixing bowl. Mash the chickpeas with a fork or potato masher (this might be difficult if your chickpeas aren’t too soft, but they will mash down eventually).
  • Mix in mayo, red onion, nori, gherkins, lemon juice, nutritional yeast, dijon mustard, malt vinegar, salt and pepper.
  • Taste the mixture and add more salt and pepper if needed.
  • Mix together and serve!
