Cottage Cheese and Strawberry Topped Crackers

The combination of cottage cheese and strawberries might seem like a strange choice, but trust me, its surprisingly delightful!

I first made this snack a year ago when I had a surplus of strawberries in my fridge, so I’m excited to make this combo again as strawberry season fast approaches.

This will take you 2 minutes to throw together, so why not give them a try for a quick and nutritious balanced snack?

What You’ll Need

  • Whole grain crackers or Ryvita – these are high in fibre and the main source of carbs in this snack
  • Cottage cheese (low-fat or full-fat) – a great source of protein
  • Fresh strawberries, washed and sliced – nutrient dense and count towards 1 plant point
  • Chia seeds (or you could use flax seeds) – for some extra crunch, protein and healthy fats (they are a source plant-based omega-3). They also count towards 1 plant point.
  • A drizzle of honey – for a touch of sweetness

How to Make These Cottage Cheese and Strawberry Crackers

  1. Add a generous layer of cottage cheese to each of your crackers.
  2. Add the sliced strawberries on top of the cottage cheese.
  3. Sprinkle some chia seeds over the strawberries and finish with a small drizzle of honey.

Balanced Snacking

These crackers follow my balanced snacking formula:

  • High fibre carbs – from the whole grain crackers or ryvita
  • Protein – from the cottage cheese and chia seeds
  • Healthy fats – from the chia seeds
  • At least 1 portion of plants – strawberries and chia seeds

Ingredients
  

  • 2 high fibre crackers (I used Ryvita's crispbread crackers)
  • 2 tbsp cottage cheese
  • 2-3 strawberries (sliced)
  • 1/2 tsp chia seeds
  • Small drizzle of honey

Instructions
 

  • Lay out your crackers and add a tbsp of cottage cheese to each one.
  • Add the sliced strawberries on top of the cottage cheese.
  • Sprinkle the chia seeds over the strawberries and finish with a small drizzle of honey.
