I don’t know about you but if I see chargrilled or roasted tenderstem broccoli on the menu when I go out, I always choose that as a side because I LOVE tenderstem broccoli (especially when it’s seasoned well).

So, I created this recipe to have my own version at home!

This recipe so unbelievably simple, yet it has become a HUGE hit with partner who won’t cook tenderstem broccoli any other way now.

With only 4 ingredients (make that 5 if you enjoy some spice), you will have the best tasting tenderstem broccoli you’ve ever eaten – trust me!

What You’ll Need

Here is a list of everything you will need. I highly recommend adding some chilli flakes for a bit of a kick.

  • Tenderstem broccoli
  • Garlic
  • Dark soy sauce – for a deep, rich flavour
  • Vegetable oil (I used rapeseed oil)
  • Optional: chilli flakes

How to Make Garlic and Soy Roasted Tenderstem Broccoli

1) Make the Marinade

In a small bowl, combine the oil, dark soy sauce, crushed garlic and chilli flakes (it won’t mix completely).

2) Coat the Tenderstem Broccoli

Wash and dry the broccoli and then add it to a roasting tray in a single layer. Using a spoon, drizzle the marinade over the broccoli, ensuring to get some oil, soy sauce, garlic and chilli flakes in each spoonful.

3) Roast Until Crisp

Put in the oven for 20 minutes until crisp. If you like broccoli with a bit more of a bite, take it out a bit earlier.

Serving Suggestions

You can serve this roasted tenderstem broccoli as a side to whatever you like!

I like serving it as a quick and easy side during the week with some salmon and rice, but it would also work well alongside chicken or other fish dishes.

Quick Tip

  • I find that shallow metal baking trays work best for roasting vegetables. I always get the best results in terms of crispness and caramelisation (which makes them taste better!).

    Ingredients
      

    • 200 g tenderstem broccoli
    • 3 tbsp oil (I used rapeseed oil)
    • 4 cloves of garlic (crushed)
    • 2 tbsp dark soy sauce
    • Pinch of chilli flakes (optional – add more or less depending on your spice preference)

    Instructions
     

    • Pre-heat the oven to 180℃ fan.
    • In a small bowl, combine the oil, crushed garlic, dark soy sauce and the chilli flakes (if using).
    • Wash and dry the broccoli and then add it to a roasting tray in a single layer. Using a spoon, drizzle the marinade over the broccoli, ensuring it's evenly coated.
    • Roast in the oven for 20 minutes until crisp, checking occasionally to make sure the broccoli doesn't catch too much.
